Favorite Fall Recipes

Being from Central Illinois, I know a lot about pumpkins. Morton, IL, where my husband is hails, is the pumpkin capital of the world. THE WORLD!! For years we would go to the pumpkin festival, snacking on all things pumpkin: pumpkin popcorn, pumpkin bread, pumpkin donuts, pumpkin pie, and pumpkin chili (not my favorite!)

I love all things autumn--candles, muffins, decor, you name it. Once fall is here, (I have to wait til fall--another self-imposed rule!) I start making my famous pumpkin, chocolate chip muffins. When my kids were in high school, they seemed to have a pot luck every other week at school. It was kind of exhausting, so I would generally make my go-to recipe of those muffins. Inevitably the kids' teachers would ask for my recipe. I will share it with you now as I did with them:  It's a generic box of pumpkin bread mix and chocolate chips!! Pretty easy, but oh so yummy.

Another fall favorite is a good trail mix: candy corn, peanuts, golden raisins, fall colored M&M's. Easy and delightful!

Probably one of my favorite things about cooler weather is bringing out the old but safe crock pot (This Is Us fans will understand my pun) and making all kinds of soups. There's nothing better than coming home to the smell of chili that's been simmering all day. Unless you forget to plug it in before you leave for work. Then there's nothing better than pizza delivery! (Yep, speaking from experience!)
